Pesto has always been and always will be my all time favorite food. There's just something about the flavors that I absolutely love, not to mention the beautiful color. :) And of course there's nothing better than homemade pesto, so here's how I make it.
First of course, you'll need basil. Rinse it thoroughly.
Pick the basil off of the plant and put it into a food processor. I used about 3 cups, more or less.
Next, we add the garlic. You can decide for yourself how garlicky you want your pesto, but I used about 4 cloves, and the flavor was pretty evident.
Mince your garlic. I used my little garlic mincer right here, but of course you can do this any way you want to. Add the minced garlic to the food processor.
Next, add grated parmesan cheese and chopped walnuts to the food processor. I used about 1/4 or 1/3 cup of parmesan cheese and about 1 1/2 cup chopped walnuts. Pour in just a little bit of olive oil as well.
Now blend everything together! I usually pulse the food processor, because it gets everything to move around more. Pour in olive oil slowly as you blend, and stop to scrape the sides and mix it around a little every once in a while. Also, check the consistency frequently to see if you want to add more oil. Its all up to you, but add just enough oil to be thick, and not so much that its runny.
Once you are pleased with the consistency of your pesto, stop adding oil, and season it with salt and pepper to taste.
And then your done! Doesn't it look gorgeous??
Oh my.
And of course, don't forget to top it off with a large helping of parmesan cheese and tomatoes!
Ingredients:
- 3 cups basil
- 4 cloves garlic
- 1/4 cup parmesan
- 1 1/2 cups walnuts
- 1/2 - 1 cup oil (however much is needed)
- salt and pepper to taste
